Now everyone can take part in a Mardi Gras tradition- gorging yourself on paczkis on Fat Tuesday, just before Lent begins.
The Polish crated the paczki "to use up all the lard, sugar, eggs and fruit in the house, because their consumption was forbidden by Christian fasting practices during the season of Lent." Being that a paczki is a doughnut, many suffering from Celiac Disease have never had this tasty treat.

Traverse City's Third Coast Bakery, along with 4 others in Michigan have crafted a recipe everyone can enjoy and are offering gluten-free paczkis. Some are also dairy-free and soy-free but may contain eggs and nuts.
