Two Southern Recipes for You for Thanksgiving! [Sweet Potato Casserole and Dressing]
HAPPY THANKSGIVING! I love going home (Alabama) during the Holidays because my Grandmother always spends two days cooking food from scratch and it is AMAZING! So, this weekend while I was home I swiped two of her recipes and thought I would share!
So here is how to make Southern style sweet potato casserole and Dressing!
Sweet Potato Casserole:
Ingredients for Casserole
3 Cups cooked mashed sweet potatos
¼ cup milk
¾ cup sugar
1 stick butter
2 eggs
1 teaspoon vanilla
MIX TOGETHER AND PUT IN BAKING DISH
Ingredients for Topping
1 stick butter
1 cup chopped pecans
1 cup brown sugar
½ cup flour
MIX WITH HANDS AND SPRINKLE ON TOP OF CASSEROLE
BAKE AT 350 DEGREES FOR 25-30 MINUTES
Dressing:
Make a pan of self rising buttermilk cornbread the night before (I use Jiffy and follow instructions on the box) then crumble into a bowl
Use 4 hamburger or hotdog buns and crumble into same bowl
Chop a medium yellow onion
Chop 4 stalks of celery
Saute the celery and onion in a pan with butter
Dump the celery and onion into the crumbled bread mix
Mix in a can of cream of chicken soup and chicken broth (now my grandmother swears that you need to boil a chicken that week for a previous dinner and use that fresh broth... I buy a can of Swanson's chicken broth and it works fine... our opinions will differ on this but I'm not boiling a whole chicken just to get broth!)
Start of with a tsp and a half of sage mixing in and ad more to taste if needed
Also a bit of salt and pepper
MIX ALL UP INTO BAKING PAN
PREHEAT OVEN TO 350 AND BAKE 30-40 MINUTES
