Happy Fit Friday!  This is becoming my favorite day!  So my trainers have been stressing the importance of diet and eating well in order to get the results that I want on top of training.  The hardest thing for me is lunch during the week and I've learned that it helps to do meal prep ahead of time and I am OBSESSED with meals in jars right now.  It makes packing lunch convenient, easy and it just looks so cute too!  SOOOO... Here's how I made my Salads in Jars for this past week for a part of my lunch (note, that's not the ONLY thing I ate for lunch, I also brought in a banana and apple with peanut butter)

  1. I get pint sized large mouth jars (trust me you don't want the small mouth)
  2. I get all the toppings I want for my salads and chop them up... (for these I used cucumbers, carrots, celery, tomatoes, red peppers, chia seeds, flax seeds, almonds and sprouts)
  3. I put my salad dressing in the bottom of the jars (for these I used a little bit of olive oil, lemon juice, garlic powder and my favorite salt free organic all purpose seasoning)
  4. Then you just layer in everything!  I use the heavy toppings on the bottom and lighter on top... ie, carrots and celery were at the bottom because they are less likely to absorb all of the salad dressing.  Everything else layer how you want until you get to the very top and I did my Lettuce (spinach and kale) on top and voila!  You've got salad in a jar!

I usually make them from 4-5 days in advance... A lot of people ask me how long the salads will stay fresh, I notice 4-5 days is my limit and they are still good (as long as all your ingredients are fresh!)  Now just pop them in the fridge and whenever you're ready to eat them pull them out, shake it up and enjoy!
