Restaurants Opening in Lansing
2025 was an incredible year for restaurant growth, seeing over 50 eateries open their doors. And 2026 seems to be shaping up in a similar way.
Soon, PetalPop Cafe will open its doors in Lansing.
According to the Lansing State Journal, this new cafe will open at 519 W Ionia Street, which was most recently SaltRock Brewing Co. That restaurant closed in May 2025 after being open less than a year. However, it's the building's older history that this new cafe is paying homage to.

That was the former site of Belen's Flowers, which was owned by Lucile Belen, a former Lansing City Councilperson who died in 2010. In addition to owning her own flower shop, Belen also founded Belen's School of Floral Design back in the '50s.
It's that history of flowers that PetalPop Cafe's owner, Syreeta Brown, is channeling into her delicious creations. The cafe will serve breakfast and lunch, and some of those offerings will be infused with flavors of flowers (but only if you want). Think pancakes, biscuits, sodas, and mocktails, with hints of lavender, rose, or hibiscus. The theme of flowers is on the walls in addition to the food, too.
