Bubbakoo’s Burritos Sets Official Lansing Opening Date

We haven’t even made it halfway through January, and already we have an update about a new eatery opening in Lansing.

2026 is shaping up to be a great year for new bars, coffee shops, and sit-down restaurants in Lansing — with 20 confirmed openings so far.

Here’s the latest on one of them: Bubbakoo's Burritos.

When is Bubbakoo's Burritos Opening in Lansing?

You can mark your calendars for January 30, according to the website, they'll be open.

Just to be extra sure, I did drive to where Bubbakoo's will be opening (3101 E Saginaw Street, where the old Big John's Steak & Onion used to be) and saw that they had officially put the sign up!

It looks like we'll soon be able to add this American, Asian, Mexican fusion fast-casual eatery to our Lansing lineup soon.

The Lansing foodie scene first caught wind of Bubbakoo's Burritos coming to town back in March 2025. Signage went up on the windows telling of the new eatery coming to town. The location is that of a former Big John's Steak & Onion, which closed in November 2024.

When it comes to food offerings, Bubbakoo's serves more than just burritos. There's also tacos, bowls, quesadillas, burritodillas, nachos, taco salads, and more. Plus, there's a cross-over when it comes to the food. You can burritos with hibachi steak; French fries with birria meat; and tacos with Gochujang crispy chicken.
