Shake Shack and Bubbakoo’s Burritos Are Opening Soon in Lansing

If you've been keeping an eye out waiting for some new food joints to open in Lansing, you're in luck, because two are about to open their doors.

So far, 2026 is shaping up to be another big year for restaurant openings. For far, 20 different eateries have announced plans to open this year, including Shake Shack and Bubbakoo's Burritos.

We've had an eye out for Bubbakoo's Burritos for some time now. We first learned that it would be coming to Lansing in March 2025. Since then, we've been waiting patiently for this fast-casual fusion restaurant to open it doors.

When is Bubbakoo's Burritos Opening in Lansing?

Originally, they had hoped to open at the end of January. However, it looks like the new opening date will be Monday, February 16. Plus, the first 100 customers in line will receive a free burrito!

You can find it in the former Big John's Steak & Onion near Frandor.

Bubbakoo's Burritos isn't the only eatery coming to the Frandor area, because that's also where Shake Shack is setting up shop.

Shake Shack is one of a total of six businesses that is taking over the space where the former Rite Aid used to be, along with Smoothie King and Wing Stop.

When is Shake Shack Opening in Lansing?

Shake Shack isn't far behind the opening of Bubbakoo's... Shake Shack plans on opening on Wednesday, February 18. This will be the first Shake Shack in the Mid-Michigan area and the 10th one in the state.

There are plenty of other eateries that plan on opening in the greater Lansing area soon, places like Foxtail Coffee, Pizzawala's, and Raising Cane's.
