I lived in Texas for several years and developed my appreciation for good Mexican food there. My experience in the Lone Star State set the bar for what I considered to be authentic Mexican cuisine.

But I learned some things about Mexican food when I moved from Texas to Virginia.

Why Aren't All Mexican Restaurants The Same?

Depending on the region of Mexico where a particular dish originates, it might have a totally different flavor profile than what you're experiencing somewhere else.

Think of it this way - if you were to order a "coney dog" in Michigan, you probably have a pretty good idea about how it's going to taste. If you were to order one in New York, it might not be the same. Not necessarily bad, just different. It's the same with Mexican food. It differs from place to place. It can still all be good.
