According to the Lansing State Journal, KorrieLinn Deland's journey from deli manager with a knack for cheesecake making to wholesale baker to opening her own bakery has been one big project.

Two years ago, DeLand left a management job at Sidestreets Delocatessen, a Charlotte deli where her cheesecakes were a favorite among customers, to start KorrieLinn's Cheesecakes, a wholesale cheesecake business.

Today her creations are sold at Horrocks Farm Market in Delta Township and Battle Creek.

You'll find them on the menu at Evelyn Bay Coffee Shop in Charlotte, Eaton Craft Co. in Eaton Rapids, Family Tree Cafe in Dewitt and Tiffany's Wine & Spirits in Kalamazoo.

Deland fills custom orders from a bakery space in Lansing's Old Town. The daily 30 mile commute to bake, coupled with all the demands of raising two active kids led to her decision to build her own bakery steps from her front door.

The Cheesecake Shack will open by mid March on her own property outside Charlotte.
