With the temperatures feeling like it's 30 below zero this week, I decided that I wanted to have A LOT of soups this week to stay warm. So I hunted everywhere and tweaked this recipe for white chicken chili that I made last night, was super awesome, only took 30 minutes to make and it also has the Josh Strickland stamp of approval.

Ingredients:
6 boneless Chicken Breasts
6 cups of Chicken Broth (I use organic cage free for both chicken stuff)
2 (15 oz) Great Northern Beans
2 cups of Salsa Verde
2 tsp cumin
1 small lime
I also like to top with cheese and black bean tortilla chips

  • Brown the chicken breasts in a small pan (Until chicken is cooked).
  • Shred the chicken and ad to a large pot with the broth, beans, salsa verde and cumin.
  • Bring to a boil then cook on low heat for 10/15 minutes.
  • Ready to serve! I like to squeeze lime juice in my bowl and top with some black bean tortilla chips it's so yummy!
